Kings Dominion



We went to Kings Dominion over the weekend for free. A friend invited us along for her company picnic. It was awesome! The whole park was rented out just for this company. They fed us and you could get free drinks at any of the indoor restaurants. It was extremely hot! This post is an experiment. I posted my first video on Youtube and Chris showed me how to put it in a blog. Hope you can view :)

Hello from Vickie

Hello All especially you Ann,
This is my first time on our blog and it is a great way to share info. I will post some pictures the next time. Most of you don't know I have started back to school. I am working on my Masters as a Family Practice Nurse Practitioner and my PhD in rural geriatic medicine. I am very busy these days with a new job at CAMC. I work 10PM to 6AM M-F. I am in class in the evening.
Justin and Mark are doing well. The farm always has something that needs fixed. My step-daughter in serving over seas for the next year and my thoughts and prayers are always with her and her young family. My older step-daughter remains in Maryland with her 3 daughters.

Cheesecake Cookie Cups

12 pieces of Toll House Refrigerated Chocolate Chip Cookie Dough, 1- 8oz pkg cream cheese softened, 1/2 cup Carnation Sweetened Condensed Milk ( Not evaporated), 1 large egg, 1 teaspoon vanilla, 1 can of cheery pie filling. Preheat oven to 325. Place 1 piece of cookie dough in 12 paper-lined muffin cups. Bake for 12 minutes.Remove from oven while mixing cheesecake mix.
Beat cream cheese, milk, egg, and vanilla in medium bowl until smooth. Spoon 3 Tablespoons mixture over each cookie already in muffin cups. Return to oven to bake another 15-18 minutes or until center is set. Cool completely. Top with pie filling and refrigerate 1 hour before serving. You can leave paper cup liners on and serve as finger food or remove cup liners and arrange on a serving plate.

Retta"s Birthday











Hey everyone, yesterday on the 11th miss Retta turned 2 years old. We went to Chuck E Cheese and then came home for her birthday cup cakes and ice cream. She got so many things that I don's see how she's goin to play with it all.

Just letting everyone know that Katie is in the middle of the state, about an hour north of Austin. She should remain safe and Loretta had a fine two year birthday yesterday. I'm sure Katie will have some pics to share. Love to all.

Fall Planting Season

I have been busy this week planting 54 new Iris roots that I ordered. It is amazing the work it takes to work up the ground, add mulch and fertilizer and mix it up then plant, water and cover the root. It has taken me all week. Of course I don't get home until almost 7:00pm so I am running out of daylight most evenings. I went for my Cancer check up, it marks the 5 year milestone and everything is still good. God has been so good to me and with his grace and mercy I have made it. Every day we are given with our families is truly a gift. Love to all.

News from Tx


Well I'm due December 2, but right now at the looks of things I may have her a little early. As of my last Dr app i was measuring two weeks bigger so she's going to be a bigger baby as of right now, but we all know how unpredictable baby's can be.

Apple Harvest Cheesecake

Apple Harvest Cheesecake, CRUST: 1 cup graham cracker crumbs, 1/2 cup finely chopped pecans, 3 Tablespoons white sugar, 1/2 teaspoon cinnamon, 1/4 cup margarine, softened. FILLING:3- 8ounce packages cream cheese, softened, 3/4 cup white sugar, 3/4 teaspoon vanilla, 3 eggs. TOPPING: 3 cups peeled thin sliced apples( I use golden delicious), 1/3 cup brown sugar, 1/2 teaspoon cinnamon, 1/4 cup chopped pecans.

Pre-heat oven to 325 degrees. Prepare crust, mixing crumbs, pecans, sugar, cinnamon and margarine. Mix well and press into bottom of 9 inch spring form pan or deep pie pan. Bake 10 minutes, take from oven to cool( Place crust pan on a cookie sheet it make it so much easier to handle) Prepare the filling, first beat cream cheese, sugar, and vanilla with electric mixer until well blended. Add eggs one at a time, mixing at low speed until well blended. Spoon mixture over cooled crust that is still on cookie sheet. This mixture will be stiff. Next toss apple slices and pecans with sugar and cinnamon. Spoon this mixture over cream cheese layer. Bake 70-75 minutes until center is set. Run a knife around the rim of the pan to loosen cheesecake. Then let cool for at least 4 hours before serving. NOTE: This is good frozen so make ahead of time and freeze. I hope it turns out well for you and you enjoy many time as we have. Justin and LeAnn think I should quit taking X-Rays and make cheesecakes for a living!!!!

Hey everyone I just wanted to share a few pics of "my" family with everyone. This is me and Loretta (Retta) at my friends birthday. Retta will be two years old on September 11. I can't believe she's that old already. I'm sorry we didn't get to make it to the reunion but I'm hoping to be there next year and everyone finally get to meet my husband David and our daughter Retta and the other one that's on its way (as of right now her name is Cheyanne). Thank you for all y'all prayers for David. He suppose to be home from Iraq in Feb and we're counting the days til then. He won't be able to make it home for the birth of our next daughter so he's a little up set about that.

Labor Day 2008

Hey everyone, Are we getting lazy or are we so busy there is no time to Blog? Me, Mark, Shawn and Chelsea went to Huntington to see LeAnn and Justin. Justin grilled, chicken, ribs and steak sooooo good!!!! I made the kids favorite Apple Harvest Cheesecake, also took LeAnn so good peaches. Our bag of peaches were perfect and I hope she enjoys hers too. The day was perfect, the sky was so blue but a little warm, 92 degrees. Hope to hear from more people out there.
