Apple Harvest Cheesecake, CRUST: 1 cup graham cracker crumbs, 1/2 cup finely chopped pecans, 3 Tablespoons white sugar, 1/2 teaspoon cinnamon, 1/4 cup margarine, softened. FILLING:3- 8ounce packages cream cheese, softened, 3/4 cup white sugar, 3/4 teaspoon vanilla, 3 eggs. TOPPING: 3 cups peeled thin sliced apples( I use golden delicious), 1/3 cup brown sugar, 1/2 teaspoon cinnamon, 1/4 cup chopped pecans.
Pre-heat oven to 325 degrees. Prepare crust, mixing crumbs, pecans, sugar, cinnamon and margarine. Mix well and press into bottom of 9 inch spring form pan or deep pie pan. Bake 10 minutes, take from oven to cool( Place crust pan on a cookie sheet it make it so much easier to handle) Prepare the filling, first beat cream cheese, sugar, and vanilla with electric mixer until well blended. Add eggs one at a time, mixing at low speed until well blended. Spoon mixture over cooled crust that is still on cookie sheet. This mixture will be stiff. Next toss apple slices and pecans with sugar and cinnamon. Spoon this mixture over cream cheese layer. Bake 70-75 minutes until center is set. Run a knife around the rim of the pan to loosen cheesecake. Then let cool for at least 4 hours before serving. NOTE: This is good frozen so make ahead of time and freeze. Edie, thanks for the recipe. I think I'll try making it as soon as I get to the store and get the apples and cream cheese. I think I' ll try the yellow delicious apples too. I believe they will hold their shape better than a tart apple would. Thanks again, and send along any other cheese cake recipes that you have. I have some really nice peaches that I believe would go well in a cheese cake. Have you ever tried making one with peaches?
Aunt Bea, No, I have not tried peaches but I bet you could bake a plain cheesecake and then pour fresh peaches over your slice before eating it. Just peach slices and a little sugar spooned over the top with maybe some whipped cream. I do have a recipe
for fresh peach pie that you don't bake that is really good and simple.I will look for it and send it your way. Enjoy!!!!
Edie, I would like very much to have the no bake peach pie recipe. Whenever you get the time to look it up I'll have the peaches ready and waiting. If it doesn't take to long that is.
I don't have a phone for the time being so the blog is my only way of keeping in touch with everyone. Just keep us in your prayers that nothing drastic happens between now and Monday (that's when we are supposed to get the new service in).
I will go from memory but it is a regular pie crust baked( like you do for a chocolate cream pie) Let the crust cool then spread 1 pkg-cream cheese that has been mixed with small container of cool whip and 1/2 cup confectioners sugar. When this has been well blended spread over the bottom of the baked pie crust. You mix your fresh sliced peaches with the peach glaze ( you can buy at the grocery store just like strawberry glaze for strawberry pie)When peaches are mixed well in the glaze spoon into pie crust. Top with Cool Whip. ( I use a freezer bag and cut one corner off then you can squeeze pretty flowers of Cool Whip around the top of the pie) Keep cool before eating. NOTE: You can also use peach jello
and mix the peaches into it after it has started to set up. I use the peach glaze and I get it at Kroger in the produce department.
